Cheesy Broccoli { Keto } Frittata

This is an easy Vegetarian keto meal that is great to make ahead of the week to have on hand for simple heat up!  I love this with a little hot sauce and sour cream!

Servings: 6

Ingredients:

  • 6 Free Range Organic Eggs
  • 2 Cups steamed and chopped broccoli
  • 1 Cup of Mozzerella
  • 2 Tbsp Heavy whipping cream
  • 6 Tbsp Cream Cheese

  • 3.6 Net Carbs
  • 5.5 g. Total Carbs
  • 13 g. Protein
  • 17 g. Fat

Macros:

  • 67% Fat
  • 23% Protein
  • 9% Carbs

Directions:  First steam your broccoli and chop, add to a greased pie pan and preheat your oven to 425 degrees, add your broccoli to the pan and then top with cream cheese seperating into 6 equal sections (one tbsp of cream cheese for every slice).

In a bowl combine eggs, mozzarella and cream, whisk together.  Pour the egg mixture over the top of the broccoli and bake for 20 to 25 minutes!! slice into 6 equal slices and serve with optional sour cream (not included in nutrition breakdown)

You can customize this recipe by adding pepperoni or bacon to the top if you are not vegetarian or you can add different veggies, like peppers, tomatoes and mushrooms to the top just like a pizza!
