I set off on a journey following a Keto meal plan and ive stumbled upon the greatest mini pizza crust recipe!!! Here’s the nutrition for each mini crust:
1 Mini Pizza Crust = .5 Net Carb – 35 Calories – 2.3 Grams of Fat – 2.4 Grams of Protein
Following a keto plan this fits in perfectly! It is really good too, I found using cheddar cheese makes a more crusty crust!
Yield: 20 Mini Crusts
- 1 Bag of Cauliflower Rice (I found this one at Costco, you can also make your own using a food processor and 1 head of cauliflower) Cooked
- 1 Egg
- 1 Cup of Cheddar Cheese (mexican blend is fine)
- 1/2 Cup of Parmesan Cheese
First I microwaved the cauliflower rice in the bag for about 6 minutes, if you are making your own you would want to place raw cauliflower in a food processor and pulse until you have a rice and then microwave (without adding water) for 5 minutes or so.
Pre heat oven to 450 degrees.
Next I used a cloth to squeeze excess moisture out of the cooked cauliflower and added the cheddar, egg and parmesan cheese. Stir until you have a batter consistency.
Spray muffin tins with cooking oil or olive oil.
Portion out 20 muffins with the entire batter, it was about one spoon full for each muffin tin.
Bake for 10 minutes, once cooled you can top with any of your favorite pizza toppings and bake! Save the excess in the refrigerator or freeze!
